I have used Scharffen Berger for years, and when my grocery stopped carrying them a couple of years ago, I was very disappointed. Just a much better quality, to my taste buds, than the usual bakery aisle chocolates. When I found them on Amazon, I was delighted. I had a TON (well, that's an exaggeration, LOL) of christmas cookies and cookies in a jar to make this year and they're just perfect. Bought both the semisweet and the dark. The only problem is my tendency to shake out a palm's worth and eat them straight from the bag. Then I run out for my cookies!I have a favorite, tweaked chocolate chip cookie recipe that I have been using for years. I like them chewy in the centers, but still a little crisp on the edges. Not cakey, not flat. I have been using Nestle semi-sweet chips for years and they are adequate. I really like the flavor of Scharffen Berger bars, so I knew these would be good. Actually, I like the Hesitated to write this because not obvious how to use what I’ve written.I seek flavorful, high cocoa, non-alkali (Dutch) processed, low Cd/Pb (websites don’t mention, see consumerlab.com/reviews/cocoa-powders-and-chocolates-sources-of-flavanols/cocoa-flavanols/), tried many (sugar and cost also issues). Scharffen Berger fit the bill and for years I ate the 82% then moved to years of 70% in 9.7 oz bars, broken these up in the wrappers with a rubber mallet (also used for chocolate mousse). Unfortunately, Central Market stopped carrying Scharffen Berger hence these bags of bits. It is unclear how they are made or cut (irregular cuts). After 2 bags I can attest they do not taste the same as broken pieces from large bars. Dates on the bags are fine, and I offer no explanation. There are no signs of temperature degradation. However, the chocolate is less rich, less complex. Taste is best described as flat and I’m not even interested in the rest. In between large bars I’ve also bought 3 oz bars of Trader Joe’s 70% or 72% Organic (neitther Dutch processed, organic viscous in texture). Both of TJ’s are better than these bits, notably not as good as the ‘old’ 9.7 oz bars.I’m unclear as to whether to buy the big bars online or can Scharffen Berger, my favorite. It’s hard to imagine they’ve changed anything but possible. Scharffen Berger is a completely independent unit of Hersey’s, once a boutique chocolate maker who was bought. But they’ve always been kept separate to run their own shop. I’ve pretty sure this hasn’t changed. This is a puzzle.I use these dark chocolate chips in my cookies. They are however sold out and I am unable to find them anywhere !I always have to have these chocolate chunks in my kitchen cabinet, ready to enhance many of my home baked treats. I often mix them with semi-sweet chocolate chips and/or nuts, in cookies, bars, and cakes.The best there is.I took a chance in buying Scharffen Berger milk and dark chocolate. I've used both before, when our grocery store carried them. It has been a few years, and subsequently, I have come to find out that I have a soy allergy. These chips and bars, both milk and dark variety contain soy lecithin. For all those non-allergic, I recommend. But, cannot give Scharffen Berger 5 stars because there was no warning about the chips or bars containing soy lecithin on the Scharffen Berger website! Definitely not Amazon or any other merchant's problem. And, I suppose I could have taken the time to contact Scharffen Berger, but wouldn't it be nice for them not to leave this to each individual?So, this time, my nieces and nephews luck out and will get to enjoy the chocolate in their baked goods.Hope this is helpful to others trying to avoid soy and/or lecithin.It's good chocolate but I'm not sure it's the best. It kind of tastes the same as Ghiradelli to me. And there are 5 bags in the order, but the bags are tiny - only 6 ounces each. And the chunks aren't that big. I think for baking chocolate chunks, it would be better to get a big bar of chocolate and cut it up. And what's up with companies like Hersheys taking over everything.
